April 12, 2009 Easter Brunch at Hilton Waterfront Beach Resort. Kids can hunt for Easter eggs during a family-friendly brunch that includes a lavish spread, visits from the Easter Bunny and a traditional Easter egg hunt. An assortment of artisan cheeses, accompanied by a variety of olives and hearty breads; corn chowder with smoked shrimp; orange chicken salad with sweat peas and sesame dressing; beet salad with oranges, cracked black pepper and red onion vinaigrette; and asparagus mimosas are great starters. Main course offers Alaskan crab legs with a mango cocktail sauce; fresh jumbo shrimp cocktail; oysters on the half shell with mignonette sauce and horseradish; a Waterfront sushi selection; ceviche with scallops, rock shrimp and calamari; lobster bisque; shades crab cakes cooked on the buffet; and pan seared salmon with corn, leeks and spinach ragout. The carving board includes roast prime rib with cabernet sauce; stuffed pork loin with Swiss chard and pine nuts; herb marinated leg of lamb with roast vegetables; stuffed chicken breast with forest mushroom duxelle; haricot vert with applewood bacon and toasted almonds; as well as buttermilk whipped potatoes. Breakfast items offered: Belgian waffles with strawberries and whipped cream; bacon, breakfast sausage, and kielbasa; scrambled eggs; and an omelet station.
