Coastal Resort to Offer Lavish Mother’s Day Brunch And A Special gift For Mom

Huntington Beach, California (April 24, 2009) –The Hilton Waterfront Beach Resort is making it easier to show mom appreciation this Mother’s Day with a special brunch, live music and spectacular ocean views. On Sunday, May 10, 2009, the coastal resort will present a culinary journey sure to please every member of the family. And, to make the day even sweeter, all mothers will receive a special two-for-one meal certificate for their next visit to the resort’s signature restaurant, Shades.

Executive Chef Jeff Littlefield and his culinary team’s elaborate brunch will start with an assortment of artisan cheeses, accompanied by a variety of olives and hearty breads; carrot soup with ginger, lemon and thyme; smoked chicken and artichoke salad with shaved parmesan and lemon dressing; crusty bread salad with cucumbers, red onions and a grain mustard dressing; and marinated heirloom tomatoes, with cucumbers, red onion and basil dressing.

In honor of the resort’s coastal location, a variety of seafood selections will be offered including Alaskan crab legs with a mango cocktail sauce; fresh jumbo shrimp cocktail; oysters on the half shell with mignonette sauce and horseradish; a Waterfront sushi selection; ceviche with scallops, rock shrimp and calamari; shrimp bisque; Shades crab cakes cooked on the buffet; and pan seared halibut with orzo pasta Provencal and lemon butter.

A carving board will feature roast prime rib with cabernet sauce; pork loin stuffed with dried cranberries and beet greens; basil roasted leg of lamb with roasted red bliss potatoes; stuffed chicken breast with sundried tomatoes, capicola and mozzarella cheese; pomodoro baked vegetables with kalamata olives; as well as buttermilk whipped potatoes.

Chef Littlefield will also prepare an array of traditional breakfast items including Belgian waffles with strawberries and whipped cream; bacon, breakfast sausage, and kielbasa; scrambled eggs; and an omelet station.

For dessert, patrons will be able to choose from a delectable assortment desserts including lemon tart with raspberries; dense chocolate mousse cake; carrot cake with cream cheese frosting; chocolate éclairs; cheesecake with berry sauces; mini fruit tarts; tiramisu cakes with amaretto; a banana tart; Black Forest cakes; and tuxedo strawberries.

Mother’s Day Brunch, which is $75 for adults and $15 for children, plus tax and gratuity, will be held in the resort’s ocean view Cielo Mare Ballroom with seatings at 10:00 a.m., 12:30 p.m. and 3:00 p.m. The coastal resort will also be providing live musical entertainment throughout all seatings.
